The Ultimate Holiday Recipe Guide
  
During these times of uncertainty and unpredictability, spending time with friends + family is becoming more and more important. Time with loved ones keeps us grounded, and not only that, it keeps us hopeful. Our family has spent a lot of time together the past few months, and as a result, we have lots of fun recipes to share with you as we head into the holiday season! More on that below.

Let's start with appetizers - The best way to kick off any party! 


Southern-Style Sliders

Ingredients:
Bubba's Q Boneless Ribs (Honey or Original)
1-2 Packs of Your Favorite Slider Buns
Coleslaw
Toothpicks for Serving
Optional: Bottle of Bubba's Q Barbecue Sauce (Honey or Original)

Coaching Points:
1. Cook Bubba's Q boneless ribs according to package directions, then shred or cut into small squares.
2. Place ribs onto bottom slider bun and top with coleslaw.
3. For added flavor, drizzle some Bubba's Q barbecue sauce on top.
4. Finish assembling by adding the top slider bun, then placing a single toothpick through the middle of the sandwich. This will help to hold the sandwich together.
5. Serve and enjoy! 


BBQ Pork Flatbread

Ingredients:
Bubba's Q Boneless Ribs (Honey or Original)
Flatbread of Choice
2 Tbs. Balsamic Glaze
1 oz. Fresh Arugula
1 oz. Olive Oil
2 oz. Brown Sugar
2 oz. Cheddar Cheese
2 oz. Red Wine Vinegar
White Onions, Peeled + Julienned

Coaching Points:
1. Cook Bubba's Q boneless ribs according to package directions, then shred or slice.
2. While the ribs are cooking, heat a sauté pan with olive oil. Once warm, add onions and cook over medium heat until caramelized. Slowly stir in red wine vinegar and brown sugar, then reduce to a simmer until sauce thickens.
3. Preheat oven to 350°F. While oven warms, top flatbread with ribs and caramelized onions. Sprinkle cheese on tp and place into oven until cheese melts (approximately 5 minutes).
4. Place fresh arugula atop the warmed flatbread and drizzle with balsamic glaze.
5. Serve and enjoy!


Now that you have some tasty appetizers for your guests to enjoy, it's time to focus on what's most important: Your main dish. Our family favors our world-famous Boneless Ribs (as seen on Shark Tank!), but other proteins like turkey, ham or prime rib are also great options. No matter how tasty they are though, every main dish needs the perfect side...


Hot Water Cornbread

Ingredients:
1 Cup Corn Meal
3/4 Cup Boiling Water
1/4 Cup Onions, Diced
1 Tbs. Shortening
1 Tbs. Oil
1/2 Tbs. Salt
1/2 Tbs. Granulated Garlic
1/2 Tbs. Granulated Onion
2 Tsp. Granulated Sugar
1 Tsp. Brown Sugar
Optional: Maple Syrup or Honey

Coaching Points:
1. In a medium sized bowl, combine all dry ingredients.
2. Once mixed, add boiling water and shortening. Stir until shortening melts.
3. Pour oil into a large skillet and heat to 375°F.
4. Shape corn meal mixture into flattened balls. Fry each in hot oiled pan, turning once until crisp and golden brown (about 5 minutes).
5. Drain on paper towels, then serve quickly with maple syrup or honey.
6. Serve and enjoy!

 

Al's Famous Mac + Cheese

Ingredients:
Bubba's Q Boneless Ribs (Honey or Original)
1 lb. Cavatappi Pasta 
6 Cups Chicken Broth (Vegetable Broth OK)
2 Cans Evaporated Milk (Whole Milk OK)
3 Cups Shredded Cheddar + Monterey Jack Cheeses
1 Cup Ricotta Cheese
1/2 Cup Parmesan Cheese
1/4 Cup Panko Crumbs
Fresh Herbs, Minced
Salt + Pepper to Taste

Coaching Points:
1. Preheat oven to 375°F. While oven is heating, fill a pan with both water and chicken broth and bring to a boil. Add pasta and add additional water as needed. Cook until al dente and drain.
2. While pasta is cooking, add milk, 2 cups of shredded cheese and ricotta cheese to a large saucepan over medium heat. Season lightly with salt, pepper and fresh herbs. Stir regularly until all cheese is melted.
3. In a casserole dish, mix cheese sauce and pasta. Top with remaining cup of shredded cheese, fresh herbs, panko crumbs and parmesan cheese.
4. While mac + cheese bakes, prepare boneless ribs according to package directions, then shred.
5. Once cheese has melted and panko crumbs are golden brown (about 10-15 minutes), remove from oven and top with shredded boneless ribs. Optional: Add more fresh herbs.
6. Serve and enjoy!



Rib-iculous Loaded Baked Potatoes

Ingredients:
4 Large Russet Potatoes
2 Green Onions, Thinly Sliced
3/4 Cup Shredded Cheddar Cheese
1/4 Cup Butter
1/4 Cup Sour Cream
1/4 Cup Fresh Chives, Chopped
Salt + Pepper to Taste
Optional: Bubba's Q Boneless Ribs (Honey or Original)

Coaching Points:
1. Preheat oven to 400°F. While oven is heating, prick russet potatoes all over with a fork or sharp knife. Wrap in foil and bake until soft (about an hour).
2. *If including boneless ribs* While potatoes are cooking, prepare boneless ribs according to package directions, then shred.
3. Once potatoes are ready, carefully unwrap and cut lengthwise slits at the top of each. Carefully scoop out the contents of each potato into a bowl.
4. Add toppings (butter, sour cream, chives, onions, cheese and ribs). Season with salt and pepper as desired.
5. Spoon filling back into each potato, then sprinkle with remaining cheddar cheese. Return to oven and cook until melted (about 5 minutes). Top with remaining ribs.
6. Serve and enjoy!

Sweet Potato Pie 

Ingredients:
9 Medium Sweet Potatoes (About 4 lbs.)
3 Unbaked 9-Inch Pie Shells
2 Eggs, Beaten
2 Cups Milk
1 Cup Butter, Softened
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar, Packed
1 Tbs. Vanilla
1/2 Tsp. Salt
1/4 Tsp. Grated Nutmeg

Coaching Points:
1. Preheat oven to 350°F. While oven is heating, boil water on the stovetop and add peeled sweet potatoes. Cook until soft, then mash.
2. Combine butter, sugars, salt and nutmeg in a large bowl. Beat with a mixer until creamy, then reduce mixing speed. Beat in the mashed sweet potatoes until well-mixed.
3. Spoon filling into pie shells.
4. Bake until set, about 50-60 minutes. Cool to room temperature before serving. Store in refrigerator.
5. Serve and enjoy!


Bread Pudding with Whiskey Sauce 

Ingredients (Pudding):
15 oz. Can Fruit Cocktail, Drained
1/2 lb. Loaf French Bread
2 Eggs
1 Cup Whole Milk
1 Cup Half + Half
1 Cup Granulated Sugar
1/2 Cup Golden Raisins
2 Tbs. Unsalted Butter, Melted
1 Tbs. Vanilla Extract

Ingredients (Whiskey Sauce):
1/2 Cup Unsalted Butter, Melted
1/2 Cup Heavy Cream or Whole Milk
1/4 Cup Granulated Sugar
1 Tbs. All-Purpose Flour
1 Tbs. Whiskey of Choice (to Taste)
1/2 Tsp. Vanilla Extract

Coaching Points:
1. Preheat oven to 350°F. While oven is heating, whisk together milk and half + half in a medium sized bowl. In a separate container, tear bread into small pieces for soaking. Pour milk mixture all over the top, then let sit for about 10 minutes. Stir.
2. In separate bowl, whisk eggs with sugar and vanilla extract until well-blended. Pulse the fruit in a food processor or blender to break it up, but be careful not to puree. Add fruit cocktail to egg mixture, then pour over bread and gently mix.
3. Put melted butter into the bottom of a 9x9" baking dish and coat sides as well. Spoon bread pudding mixture into dish.
4. Bake uncovered for 1 hour or until bubbly on the sides and golden brown. 
5. While bread pudding is baking, make whiskey sauce. Melt butter in a saucepan and whisk all ingredients except vanilla extract and whiskey. Bring to a boil.
6. Reduce heat and simmer until thickened, then remove from heat. Add vanilla and whiskey and whisk.
7. Once bread pudding is finished baking, let cool for about 5 minutes before cutting into squares. Drizzle with whiskey sauce and enjoy!
