Simple Four Bean Salad June 25 2018
Beans are a great source of protein, dietary fiber, B12 vitamins and so much more! That's why we like to include them in our family's summer salads, because every barbecue needs a 'lil nutrition in the mix. Add some green or red peppers for added flavor, then dig in and enjoy!
Ingredients
2 cans green beans
2 cans yellow beans (wax beans)
1 can garbanzo beans (chickpeas)
1 can black olives (sliced)
1 can kidney beans
1/4 cup olive oil
1/4 cup vinegar
1/4 cup sugar
1 tsp salt
1 tsp pepper
Coaching Points
Drain the cans of beans and olives. In a salad bowl, toss them together. In a separate small bowl, mix oil, vinegar, sugar, salt, and pepper. Pour dressing over the vegetables, and toss gently.
Serve cold.
