Cookout season is upon us and while grilling everything from steaks, burgers and chops to chicken, fish and veggies is an easy upgrade to any menu, side dishes are often the star of the show. For another take on Potato Skins, consider new toppings like Bubba’s Boneless Ribs to bring some flavor & fun to your next BBQ!

 

 

Ingredients

 

Bubba's Boneless Ribs (Original or Honey)

Russet Potatoes

Red onion, thinly sliced

Monterey jack cheese

Fresh dill

 

 

COACHING POINTS

 

Wash and bake potatoes until tender (6-8 minutes in the microwave if you’re in a rush or bake in the oven for 30 minutes at 425°F). Let cool and slice lengthwise.

 

Scoop out center, leaving about 1/3 in around all sides of and save scooped potato for another use if desired. Bake potato skins for another 10 minutes until lightly browned. While the skins bake, prepare your filling.

 

Sauté Bubba’s Boneless Ribs and Red Onion in a pan over medium heat until onions are slightly soft and ribs are warmed through. Divide boneless ribs and onions evenly into potato skins and top with jack cheese.

 

Return to oven for 5 minutes until cheese is melted and lightly bubbling. When skins have cooled slightly, top with fresh dill.
