Al's Famous Mac 'n Cheese September 16 2019

   

 

There are as many ways to create a delicious, comforting mac and cheese as there are people in the world! And, while every recipe may be different, one thing is for sure – toppings make it a meal. Our hearty and flavorful Boneless Baby Back Ribs will elevate your mac and cheese from a side dish to the star of the show.

With mac and cheese recipes, comfort is the primary goal, but simple and easy recipes are also important to creating a delicious mac and cheese dish. Using Bubba’s Boneless Ribs or Pulled Pork accentuates the creamy, robust flavor with an added BBQ kick.

 

Ingredients

1 Pack Bubba’s Boneless Ribs or Pulled Pork

1lb Cavatappi Pasta

6 cups Chicken Broth (can use Vegetable Broth)

2 cans Evaporated Milk (can use regular Whole Milk)

3 cups Shredded Cheddar and Monterey Jack Cheese

1 cup Ricotta Cheese

Kosher Salt

Ground Pepper

Fresh Herbs, minced

½ cup Parmesan Cheese

¼ cup Panko Crumbs

 

COACHING POINTS

Preheat oven to 375. Bring Chicken Broth to a boil and add pasta (add additional water as needed). Cook until just al dente and drain. While the pasta cooks, add Milk, 2 Cups of Shredded Cheese and Ricotta cheese to a large sauce pan over medium heat. Season lightly with Salt, Pepper and Herbs. Stir regularly until all cheese is melted.

 

In a casserole pan, mix cheese sauce and pasta. Top with remaining cup of Shredded Cheese, Fresh Herbs, Panko Crumbs and Parmesan Cheese.

 

While the mac and cheese bakes, prepare the Ribs or Pork according to preferred package directions and shred with a fork. When cheese has melted and Panko Crumbs are golden brown (about 10-15 minutes), remove from the oven and top with shredded BBQ meat and fresh herbs.

 

Serve simply, and enjoy!
